Tarator is a traditional Bulgarian cold soup prepared and consumed in the hot summer days and is loved for its unique refreshing and nutritive qualities. I think this is the second most consumed 'meal' during the hot summers in Bulgaria
Ingredients :

1 kg of 3.5% fat Omur yogurt (or another type, preferably Balkan)
1 liter of drinking water
1 big cucumber
50 grams of fresh dill
2 big cloves of garlic
3 tbsp of extra virgin olive/sunflower oil
3 tbsp of crushed walnuts
1 tbsp of salt
Beat the yogurt in a pot until smooth, add the water and continue beating until smooth. Peel the cucumber and cut it into very small pieces, add it and stir. Chop the garlic, fennel and add them together with the walnuts and salt. While stirring add the oil. Stir well and leave it covered in the fridge to rest for an hour. Enjoy!
